    The Black Forest gateau ( 奶油蛋糕),one of the most popular cakes in the world , is celebrating its 100th birthday this year .

    Since its creation in 1915 , the Black Forest gateau has been a classic for many dessert lovers. But despite its name , this cake was not even created in the Black Forest area of Germany.

    Although it gives bakers a lot of daily business and it is the biggest export from the southwestern region , it was a baker named Josef Keller who created it in Bad Godesberg . One day while working in his cafe , he decided to combine whipped cream (搅匀的奶油),cherries and Schnapps , the famous tart cherry liquor(酸樱桃酒)form Black Forest region , into a gateau . Keller served it to customers and since that day, it has been popular in bakeries around the world .


    However the gateau's quality soon suffered because of changes to the original recipe . For example , in the US, bakers usually leave out the liquor .But in Germany the liquor is a must--otherwise the gateau can 't be sold under the Black Forest name . As CNN noted ;“It is the cherry pit(核)flavor and liquor that give the cake Its taste.”

    The cake's look is believed to be another possible reason for the name . Traditionally , a Black Forest gateau is made from several layers of sponge bases . It is said that the look was inspired by the Black Forest woman's costume;the dress is as black as chocolate chips , the blouse is as white as cream and the hat has a white base with red pompoms(绒球),a strong reminder of cherries .
